About the dish
- 1 bag PureRice
- 500g Char (fish)
- 1 tbsp Butter
- Olive oil
- Salt and Peppar
- 1 Mango, diced
- 2 Tomatos, diced
- 1Spring onion
- 1Avocado, diced
- 1 fist fresh coriander
- 1 Lime (juice)
Boil in salted water for 3-5 minutes.
Drain and set aside.
Season the Char with salt and pepper.
Heat 1/2 Tbs. of the olive oil in a skillet over medium-high heat until shimmering hot. Put the fish skin side down in the pan.
Cook undisturbed for 3-4 minutes.
Turn over the fish and cook for 2minutes.
Put butter on the pan and scoop the butter over the fish.
While the fish is on the pan, make the salsa.
Mix together mango, tomatoes, avocado, spring onion and coriander.
Drizzle with the juice of 1/2 lime, olive oil and mix well. Season to taste with salt.
Add the rice to the salsa and mix.
Put spinach on a plate and the fish on top.
Decorate with the mango-salsa and some lime.
