About the dish
Moroccan food is full of flavors and amazing colors. Here we have made a chicken influenced by Moroccan cuisine with low carb rice from PurePasta. The rice is made from glucomannan and these kind of rice are often called shirataki rice.
Be prepared to dazzle your family and/or friends with this tasty dish. Low-Carb and gluten-free dish that will hopefully be a winner in your kitchen.
Ingredients
- 2 Chicken breasts
- 10 g butter
- 1 red onion
- ½ teaspoon cinnamon
- ½ teaspoon saffran (in warm water)
- 1 tablespoon coriander
- 1 tablespoon ginger
- 2 garlic cloves
- 1 lime (juice)
- 1/2 dl water
- 1 tablespoon olives
- 1 bag PureRice
Sauce (optional)
- 2 tablespoons greek yogurt
- 1 garlic cloves
- ½ lime (juice)
- salt
How to
Rinse the rice in cold water. Drain
Slice the red onion and garlic.
Heat a medium size skillet to medium heat. Add butter, then onions and garlic. Continu with salt, ginger, saffran, cinnamon, lime and lastly coriander.
Lay the chicken breasts and the olives on top.
Add the water and put on the lid. Let is boil at medium heat for 40 minutes.
When 5 minutes are left. Turn the chicken on the other side and add the PureRice.
