About the dish
The beetroot sallad is a classic part of the Swedish Christmas buffet. The beet roots are super nutritious and taste so very good. Now we are adding Pure RIce as a little twist to the classic dish to give it a fuller stomach because of it´s high fiber content.
This salad is sugarfree, glutenfree and low in carbs but first and foremost it is healthy ;)
A true classic dish that fits the Christmas buffet, on bread or with chicken... only your imagination is the limit.
- 2bags PureRice
- 600 g fresh beet root
- 1 dl mayonnaise
- 1 dl crème fraiche
- ½ msk Dijon mustard
- Salt and pepper
- 1/2 red onions
- 2 st red apples
Drain the rice with cold water.
Boil the rice for 3 minutes and let it cool down
Clean the beet roots well. Boil them in water for 30 minutes. They will become soft but not too soft. Clean them again in cold water before pealing them.
While they are cooling, mix the mayo, créme fraisch and mustard. Add salt and pepper to taste.
Chop the red onions and apples in small bites.
Cut the beet root in small cubes.
Mix all the ingredients till the color is evenly pink.
Homemade beet root salad is simply better!
