About the dish
Ingredients
- 1 package PureNoodles
- 1 tablespoon coconut oil
- ½ zucchini, cut into cubes
- 3 garlic cloves finely diced
- ½ yellow onion, diced
- 1 ½ tablespoons green curry paste
- 2 boneless, skinless chicken breast, cut into 1-inch chunks
- 1 large carrot, thinly sliced
- 1 handfull spinach
- 4oog (1can) coconut milk
- 3dl water
- 200g broccoli, chopped
- 1 cube vegetable broth
- Fresh cilantro, chopped
- Salt and pepper to taste
How to
Drain the noodles in cold water.
Cut the chicken breasts into 1 inch chunks.
Preheat a large pot (medium heat). fry onion and garlic in coconut oil for a few minutes.
Add chicken and green curry. Fry for a few minutes.
Add broccoli and carrots. Fry for a few minutes.
Add coconut milk, water, vegetable broth cube, and let it come up to boil. Let it simmer for 2 minutes.
Add the rest of the vegetables and add the noodles. Let it simmer for 5minutes.
Taste, add salt and pepper after taste.
Serve and garnish with cilantro.
